Product Description Serpa, a raw sheep's milk cheese from the Alentejo region of Portugal, is considered to be the most famous traditional cheese from this region. Made only from milk taken from Merino sheep, this cheese has a straw-yellow colored rind covering a buttery interior with few holes. Aged for at least six months, its rind is rubbed with olive oil throughout curing. Serpa is slightly sweet in flavor with hints of local herbs and grasses. It is wrapped in a white linen cloth for support, which gives it a decorative artisan appearance. Serpa is typically served before a meal, sliced thinly. - Made from unpasteurized sheep's milk.
