This is great cheese. Great fresh cheddar flavor, not to sharp.Of course you remove the outer black wax cover that keeps it fresh before using. I saw one buyer didn't and tried to melt it in the protective cover. How stupid was that. I think a child would figure out it should be removed. I have had no problems cutting this cheese. I bought 3 and froze two. I'm almost out now and the frozen ones, when thawed, are just as fresh as when I got them and cut EASILY. I'm ordering 2 more.
